| Culinary Arts at Wuerzburg High School Transcript | ||

The Culinary Arts I course at Wuerzburg High School is designed to provide students with basic food preparation skills and management skills for working in the hospitality industry. The National Restaurant Association Educational Foundation supervises a national certification program. Upon completion of a full year of instruction in Culinary Arts I the students will take a comprehensive exam. A score of 70% or better will count towards the national ProStart certificate awarded by NRAEF. The certificate earned is recognized in all 50 states for scholarship and employment opportunities. Interview: Tina Villella " Wuerzburg American High School is the only school in the Bavaria District to offer Culinary Arts at this time. It is, however, one of the four high schools in Europe that is offering Culinary Arts. After two years of classes and four hundred hours of paid internship the students will earn the certificate." End Interview The program covers basic culinary arts training; restaurant management, accounting, law; small business management; professional communications and human resource management. Instructional activities include in-class projects, worksheets, an extensive amount of time in lab practicing various preparation skills. The students will plan, prepare and serve meals; assume classroom leadership roles; work cooperatively as well as independently; and participate in group discussions. Students master both the management side and the food preparation operation. The program provides a strong basis in management practices as well as basic culinary skills that will help students to achieve their goals in the foodservice and hospitality industry |
